Why don't the waves behind a boat or duck make a perfect V-shape, like

This is because thats just not how water moves. Each particle is water has it’s own status and it will almost never behave perfectly and form a V. It may be near the shape, but it will never be perfect since each water molecule is separately impacting everything, including itself.
